Pear, Walnut and Goat Cheese Stuffed Endives

This is such a simple appetizer with no cooking involved! There is just something fancy to me about endives and I had some leftover from my hummus earlier this week. I gathered a few other things from my kitchen, made an assembly line and this is what I came up with.

Pear, Walnut and Goat Cheese Stuffed Endives

For this recipe, I used a beurre bosc pear, but any kind will do.

Pear, Walnut and Goat Cheese Stuffed Endives
     makes 8
8 endive leaves
8 pear slices
8 walnut pieces
2-3 T goat cheese
1 tsp balsamic vinegar
2 tsp honey

Line up endives and top with a pear slice. Add a little goat cheese to the end and top with walnut. Plate stuffed endives. 

In a small plastic measuring cup, stir together balsamic vinegar and honey. (If honey is stiff, put measuring cup in microwave for about 5 seconds). 

Drizzle mixture over walnuts and serve.

Yum, these are good! I'm pretty much a sucker for anything with goat cheese! These kind of remind me of the Fig Flowers I did a few weeks ago.

These are crunchy, sweet, creamy, tangy; they've got it all!
