Spinach and Feta Chicken

This is a quick and simple meal to throw together on a week night, or anytime. The slightly melty feta cheese makes this healthy dish feel "bad" and you almost don't even know you are getting a vegetable in there.

Spinach and Feta Chicken

Psssst, the feta is *fat free* too! Just look for it in the fancy cheese section of your grocery store.

Spinach and Feta Chicken
3 chicken breasts, cut into pieces
1 red onion, roughly chopped
1 8-10oz bag baby spinach leaves
2 cloves garlic
1/2 tsp marjoram
1/2 tsp cumin
1/4 tsp salt
1 C fat free feta cheese crumbles

In a large sauté pan, begin cooking chicken pieces, sprinkling in marjoram, cumin and salt. Cook until done and set aside. In the same pan, sauté the red onion for a few minutes. Once onions have turned slightly translucent, add spinach and garlic. Sauté until spinach begins to wilt.

Add chicken back into pan, and lastly add feta cheese. Stir to combine and let feta get slightly melty. Serve.

You could actually probably do with the added salt because feta cheese has so much flavor and is pretty salty by itself.

I served this with my double red pepper hummus and pita chips for a well rounded meal. {Let's be honest....I would probably freak out if I didn't have carbs with every meal!}

  2. Nice way to go greek with chicken. This looks like a tasty well rounded meal with fresh ingredients. It also helps that the ingredient list is not long. I would welcome a plate of this on my dinner table-yum!
