Red Velvet Peppermint Crinkle Cookies

It's December and I am officially ready for Christmas! The lights, the music, the presents, the COOKIES! As I'm blogging this post, I am listening to Christmas music on Pandora. Sing it to me, Harry Connick Jr. What a wonderful time of year! ♥

Red Velvet Peppermint Crinkle Cookies

As wonderful as this time of year is, I know folks can get overwhelmed with all there is to do. I don't even have kids yet and I don't seem to have enough time to get everything done. How do you do it, moms?

The nice think about this recipe is that I used a cake mix for the base of the cookies. Easy peasy!
{Here are a few more cake batter cookie recipes: Funfetti Cake Batter Cookies, M&M White Chocolate Candy Corn Cank Batter Cookies}

My foodie friend, Liz, over at Southern Charm, had a giveaway the other day and I won some Duncan Hines coupons. {She's pretty awesome. Go check her out!} So I bought a Red Velvet Cake mix and got started.
I altered this from Duncan Hines Red Velvet Crinkle Cookies. The original recipe has lemon in it and no peppermint.
If you ask me, the peppermint is a necessity! These cookies are not overly sweet, which I like, but the peppermint is a nice addition. Plus it's pretty!

Red Velvet Peppermint Crinkle Cookies
     makes about 36
1 box Duncan Hines Red Velvet Cake
6 T butter
2 eggs
1 tsp peppermint extract
1/2 C crushed peppermint or candy canes
1 C powdered sugar
1 tsp cornstarch

Preheat the oven to 375°. Melt the butter and set aside to cool. In a large bowl, mix together the cooled butter, cake mix, eggs and peppermint extract. Add in the crushed peppermint and stir. In a shallow dish, mix together the powdered sugar and cornstarch with a fork.
Now, Duncan Hines says to form into balls, but I had a HARD time doing that because the dough is so sticky. So, here's my special tip.
Take two spoons and drop a blob of dough in the powdered sugar like this.

Move it around with spoon until it is mostly covered in powdered sugar. Then, once it is already covered, roll it into a ball and place it on a cookie sheet. Believe me, this is one MILLION times easier!

Make sure you don't over crowd the baking sheet. These babies spread out.

Bake these for 9 minutes. (They won't look done but they are. I tried 10 and 11 minutes and each were too long). Take them out of the oven and cool for one minute. Then move onto a cooling rack. They will be chewy with little pieces of crunchy.

Plate up to serve,

or box up for gifts.

Christmas is my favorite holiday and these cookies would be fun to take to a Christmas cookie swap! If you need a few more Christmas ideas, click on my holiday page!

Now if I could just make everything on my Christmas Pinterest board! *sigh* One thing at a time I guess! ☺

  12. These type of cookies do deserve some peppermint! Somehow the lemon just does not do it for me either-especially after seeing these peppermint ones. These are a great addition to the holiday goodies. Well done!

  22. I just made these with the addition of chocfolate chips. Everything tastes better with chocolate! ;)

Thanks for sharing this recipe! I agree that 9 minutes to bake is perfect.

  23. I just made these and they were good. I did make a mistake that turned out to work out for my benefit. I accidentally added the cornstarch to the batter rather than the powdered sugar - the result was a much easier cookie to roll. Tasted great, consistency was perfect. I might hold off on the peppermint extract next time (or maybe just use a smidgen). Thanks for sharing!

  25. I can't wait to try these! When you say to mix the cake mix with the butter, eggs, etc, are you mixing just the dry cake mix or as it says to prepare it on the back of the box? Thanks for your help!

  26. Anonymous 5:13, good question! Just the dry cake mix, not fully prepared. Let me know how they turn out!

  29. If you refrigerate the dough its easier to roll. I do that with real crinkles, which are my favorite. Crinkles plus candy cane!! Are you kidding me:)I can't wait to make these. I'm buying the cake mix tomorrow!

  31. Just made this recipe for a Christmas reception. I did take some of the counsel above and added the cornstarch to the dough and added only 1/4 tsp. peppermint extract. These cookies are amazingly simple to make and so very tasty.

  32. These are excellent! I made them for a work cookie exchange and they were a huge hit!!!! Thanks for the recipe; I will be making them every Christmas!!! If you don't want to crush peppermint; there are peppermint chips readily available in the grocery store.

  33. I made these and wrote about them here. I like this version much better than the plain chocolate crinkles.

Although, please don't make the same mistake I did and buy the Duncan Hines Decadent Red Velvet cupcake mix. This does not have the right amount of cake mix for this recipe!

Thank you for sharing this yummy recipe!

    1. Thanks for sharing your version with me! Sorry they weren't as red as mine. I hate when I get the wrong thing! ha :( They are still pretty though, and your macaroon kisses look GOOD! Yum! My husband would love those! Coconut, almond extract, dark chocolate, YUM!

  34. Instead of melted butter, I used 1/2 c butter flavored Crisco and they rolled up beautifully with far less sticky mess!
