Tater Tot Turkey Sausage Breakfast Casserole

Last week we had a breakfast potluck at work and I wanted to do some type of "meat n potatoes" casserole. I have never had that much luck with shredded hash browns turning out super crispy {note to self, get a ricer!} so I thought tater tots would be a good substitution.

Tater Tot Turkey Sausage Breakfast Casserole
       serves 8
2 lb bag of tater tots, thawed
1 lb ground turkey sausage
1 yellow onion, diced
2 cups 2% cheddar cheese (or cheese blend), divided
4 large eggs 
1 1/2 C skim milk
1 T hot sauce
Salt and pepper

Preheat oven to 375°. Lay thawed tater tots out on baking sheet and bake for 15 minutes to make sure the moisture is cooked out. Meanwhile, heat a large skillet over medium-high heat and cook the sausage and onion. Drain off fat and set aside. In a medium bowl, beat the eggs and add the milk, hot sauce, salt and pepper, and stir to combine. 

Pour sausage and onion mixture in a 9X13 pan. 

Layer 1 1/2 cups of the cheese over the sausage mixture. 

Pour the egg and milk mixture over that. 

Line the entire pan with the tater tots (every single one fit perfectly, it's like a sign or something that you should make this!)

Bake, uncovered, for 35 minutes. Pull out of the oven and top with remaining 1/2 cup of cheese, and bake for a remaining 5 minutes.

Remove from oven and cool slightly before serving. 

There are a lot of variations that you could make to this dish. Use hamburger or venison instead of sausage and serve for dinner. Use bacon instead of sausage. Use hash browns or potato cubes instead of tater tots. Either way, this is a great meal for breakfast, lunch or dinner. Or brunch. Or brinner. Whatever.

Just make sure to season the egg and milk mixture so that it won't be bland. This would be an excellent casserole to make for Christmas morning. Just cook the tater tots, sausage and onion the night before, then assemble the whole casserole, except for the tater tots, and put it in the fridge. In the morning, when the oven is preheating, top the casserole with the tots, and bake! That's it!

  6. The turkey sausage combined with low fat cheese was really yummy! I know the eggs and tater tots aren't exactly healthy, but any minimal changes to diet is better than none!

  7. I made this a couple of weeks ago and it's absolutely delicious, thank you for sharing!!! One question - how do you suppose it would do in a slow cooker overnight?

  8. It would be good if you would put the whole recipe, ingredients and directions together at least at one place so it could be copied and pasted. I thought it was wonderful that several people actually tried this recipe and thought it was good. So many of the blogs people just look and say it looks good but no one has tried it. I think the pictures are good but I can't remember all the direction and won't even bother to try it. If I use the print it could be 5 or 6 pages.
