Buffalo Chicken Doritos Casserole

Remember my Mexican Doritos Casserole from a few months back? Well, this is like its cooler older brother.

Buffalo Chicken Doritos Casserole

Also, I have a confession. Part of the reason I wanted to make this was so I could use this:
It was my birthday present from my sister-in-law and I was just waiting for the perfect recipe to use it for.

Back to the grub. If you have been following my blog long, or you know me at all, you know that I LOVE dishes with buffalo wing sauce or flavor. So these Blazin' Buffalo & Ranch Doritos are right up my ally! This recipe is simple and fool proof.

Buffalo Chicken Doritos Casserole
      serves 6-8
2 chicken breasts, cooked and shredded
1 onion, chopped and sauteed
2 tsp ranch seasoning mix
5 T Louisiana hot sauce
15 oz can great northern beans, drained {or cannellini or other white beans}
10.5 oz can 98% fat free cream of chicken soup
2- 4oz diced green chilies, drained
11.5 oz bag Blazin' Buffalo & Ranch Doritos {about 3/4 of the bag}*
1 C shredded colby and monterey jack cheese
Cilantro for garnish

Preheat oven to 350 degrees. Put shredded chicken and sauteed onions in a bowl. Mix in the ranch seasoning and hot sauce. 

Add in the beans, soup, and green chilis.

Crush up a handfull or two of chips and layer them on the bottom of the dish. Layer the chicken mixture over the chips. Crush remaining chips on top, then top with cheese.

Bake for 15 minutes, or until nice and bubbly. Top with cilantro and serve. 

*For the Mexican version of this casserole, I said to put more of the chips on the bottom of the dish and less on the top. For this one, I suggested to put more on top. This is totally a personal preference. Either way is great, but if you are weary of soggy things, put more on the top. :)

So there you have it. Another buffalo recipe by the Cowgirl. I just can't help myself. :)

  4. Great tex mex dish this is! The crunch of the Doritos and the buffalo flavor is something I am now craving. I mean, really, chips on top and bottom-could not think of anything better at the moment-yum! Another winner!

  10. YUM! Even though my kids don't like hot I can do a mild version! I can hear your accent when I read and I have NEVER heard your voice but the Southern Gal is felt! Also, I just had a chipotle, sweet mashed potato from a lean cuisine dish that sounds like you could probably make. If you figure it out let me know :)

  14. We made this tonight and it was so yummy. We added a can of corn drained and just did Nacho Cheese Doritos instead of the Spicy Buffalo ones. It was awesome. Thanks.
