Chicken salad gets such a bad rap because of the mayonnaise in it. Well, swap that out for protein packed yogurt and add some summery goodness and you have this flavorful tropical chicken salad.

Healthy Tropical Chicken Salad
serves 4
2 1/2 C chopped, cooked chicken breast
3/4 C non-fat, plain Greek yogurt {Chobani}
1 1/2 C fresh chopped pineapple
1/2 C chopped celery {about 1 stock}
1/2 C chopped macadamia nuts {I used unsalted; any kind will work}
1/4 tsp curry powder
Cook chicken breast and chop to desired texture.
Place everything in a large bowl and mix together.
Cover and refrigerate for a few hours until everything is cold. Serve on a salad, with crackers or pita bread, or enjoy it alone.
I LOVE this recipe!! I really enjoyed the sweet pineapple with the chicken. And if I'm being really honest, I am not all that fond of curry, but the small amount in here tastes great with the pineapple. Because this is a "tropical" version of chicken salad, I only used 1 stock of celery because I didn't want the flavor to be overwhelming, but I still watend the CRUNCH!
This is a very healthy recipe, packed with protein. And if you choose to not eat it with crackers, it is low in carbs. Also, if you are on a low fat diet, this recipe would be perfect for you! Just omit the macadamia nuts.

ReplyDeleteI have always liked pineapple marinade with chicken, so I am sure I would enjoy this chicken salad. Not only is the pineapple a great ingredient in this, thumbs up for the curry and macadamias as well. I am glad I did not miss this post-yum!

I have never tried pineapple in chicken salad either, but you definitely have me intrigued! I will have to make this yummy and low fat salad for dinner for sure!!!
