This casserole is so quick and easy to put together and it's a spin off of another sausage breakfast casserole that has been a family favorite for a few years. We are currently snowed in right now and Chris is at home so I wanted to make something scrumptious for breakfast. I don't have any cream cheese so I improvised.
Sausage, Egg & Cheese Breakfast Squares
Interested but not convinced? Well the crescent roll dough on top and bottom make these taste like sausage, egg and cheese biscuits! Yeah, I thought that would do it!
Sausage, Egg and Cheese Breakfast Squares
adapted from my sausage cheese squares
makes 16-20 squares
1 lb hot ground turkey or pork sausage {OR 1 lb sausage + 1/4 tsp crushed red pepper}
6 eggs
3/4 C skim milk
1 1/2 C shredded cheddar cheese
1 tsp salt
1/2 tsp black pepper
2 cans crescent rolls, {regular or reduced fat}
Preheat oven to 400 degrees. Cook sausage in a skillet. Meanwhile, in a medium bowl, beat eggs together with milk, and add salt and pepper.
Line a 9X13 baking dish with one roll of crescent dough. Pour sausage and 1 C of cheese on top. Pour egg mixture over sausage and top with remaining 1/2 C of cheese.
This is the perfect brunch dish. The eggs cook up and are fluffy but not over cooked. It would also be great on Christmas morning or a special family weekend.
The flaky crescent roll dough on top is the perfect quick crust for this easy breakfast casserole.
This was the perfect breakfast to whip up on a snow day. Warm, savory, comforting and delicious! Thank God for sausage, and for snow days! :)
