Easter Dishes and Desserts


Easter is such a special holiday. One thing I love about holidays like Easter is the traditions that come along with them. Wonderful recipes passed down from grand parents or neighbors that grace the table is what the after church meal is all about. It's a time to

Whether you serve ham, turkey or steaks for Easter, I wanted to put together a list of great side dishes and desserts to go along with the traditional dishes that your family normally has. Give a few of these a try and let me know what you think.

Scalloped Potatoes Au Gratin with Gruyere- This classic side dish is pretty self explanatory....except this one has three kinds of cheese. Yum!


White Eggplant Ratatouille- If you like eggplant, you've got to try this beautiful dish! If you can't fine white eggplant, purple would work just as well. It comes together quickly and it's beautiful to entertain with.


Parmesan Roasted Cauliflower - This low carb dish is a great replacement for traditionally heavier potato side dishes. Also, with not much cheese, this lower calorie dish still has a wonderful flavor!



Seven Layer Salad- This is my grandma's recipe for the classic seven layer salad (also known as Governor's salad), and this dish was at several holiday gatherings when I was growing up. You won't want to miss the crisp bacon topping over this colorful, classic.


Cauliflower Gruyere Gratin- Now THIS lower calorie version of traditional potato gratin is not missing anything. It's rich and creamy and you won't even miss the potatoes with all the delicious gruyere in here!


Zesty Ranch Potatoes- Let a zesty ranch packet give you a hand with these quick-prep potatoes. Fresh rosemary and Parmesan will help the potatoes to still feel special with out much work on your part.


Cucumber Black Bean Feta Salad- When you think of Easter, you probably don't think of a salad where feta cheese is the star, but this is such a lovely, bright dish that it's great to entertain with. 


Pineapple Carrot Layer Cake with Cream Cheese Frosting- Carrot cake for Easter? No explanation needed! In this post, I show you step by step instructions for making a beautiful layered carrot cake. I also swap out some of the oil and replace it with unsweetened apple sauce and crushed pineapple, just to lighten it up a little. 


Whole Wheat Lemon Poppy Seed Muffins- Something about lemons remind me of Easter and these healthier muffins are the perfect breakfast or brunch.


Easter Egg Krispie Treats- A classic dessert turned cute and Eastry!


Carrot Cake Coconut Cookies with Carrot Cake M&M's- Do yourself a favor and make these cookies! They are stuffed with oats, coconut, carrots, nuts and......carrot cake white chocolate M&M's! These limited time candies are cinnamony, nutmegy delicious! Don't miss your chance to wow your guests with these!
