Blueberry Oatmeal Bread


This bread is so moist and delicious!
And  psssst, it's pretty healthy too. I lightened it up by using apple sauce and very little oil. Also, there is a ton of protein in this one little loaf because I used Greek yogurt to keep it moist. I love the pretty blue burst of color that the blueberries make when the bread bakes. And slicing into it is kind of like opening up a present. A really, really yummy present.

Blueberry Oatmeal Bread

This would be a wonderful bread to make for breakfast or brunch on Mother's Day. It's delicious, pretty healthy and makes a lovely presentation. 


Blueberry Oatmeal Bread
     makes 1 loaf
1 C old fashioned oats
1/2 C oat flour {or blend 1/2 C oats in food processor or blender}
1 C all purpose flour
1 tsp cinnamon
1 1/2 tsp baking power
1/2 tsp baking soda
1/4 tsp salt
1 1/2 C non fat, plain Greek yogurt {I like Chobani}
1/4 C vegetable oil
1/4 C unsweetened apple sauce
2 eggs
2 tsp vanilla
3/4 C sugar
1 C blueberries*

Preheat oven to 350 degrees. Spray loaf dish with baking spray with flour in it, such as Baker's Joy or the Pillsbury brand. In a medium bowl, mix together the oats, oat flour, flour, cinnamon, baking powder, baking soda and salt.
In a large bowl, whisk or mix together the yogurt, oil, apple sauce, eggs and vanilla. Add in the sugar and mix.

*After the blueberries have been washed, mix them with 1-2 tablespoons of the dry ingredient mixture until they are coated. This way, the blueberries won't sink to the bottom of the bread.

Add the dry ingredients to the wet a little at a time and gently mix until everything is incorporated. Add the blueberries to batter and gently fold in. Pour batter into a loaf bread pan and bake for 55-60 minutes or until bread is fully cooked and a tooth pick comes out clean.
Let cool for a few minutes then tip bread out of pan to cool on a cooling rack. 

There is an additional 36 grams of protein in here just by swapping out some of the oil/butter that is normally in quick bread, with the Greek yogurt! It is sweet but not too sweet. And the blueberries add a nice burst of flavor in every bite.

The other thing I like about this bread is that it is really filling. The oats and oat flour give it a great texture and it fills you up. Also, I didn't add nuts to this bread but that would add a nice texture too.

  3. Ok this bread is fantastic! Used it for both of my daughters on their first birthday for the "smash" cake, just topped it with low sugar whipped cream (homemade too of course) and it was a hit... Without any of that over sugared throw up that sometimes follows first birthday parties, I hear 😋 Thanks!
