Cheesy Artichoke Bread

Word to the wise, don't make this if there's no one else around to eat it with you! Sheesh!

Cheesy Artichoke Bread

So this is what happened. I saw this delicious bread on Instagram the other day. My fellow food blogger buddy, Kristen over at Mrs. Schwartz's Kitchen, made some yummy bread slathered in artichoke spread. Sooooo when she posted the recipe on her blog, I made it that day, for lunch, and ate the WHOLE thing! Neat!

So like I said, you should probably have a buddy around when you make this! Or at least some will power.

Cheesy Artichoke Bread
     makes 1 loaf
8 oz fat free cream cheese, softened
14 oz can of artichoke hearts in water, drained
3 large cloves of garlic, grated
1 C shredded Parmesan cheese plus extra for topping
1/2 tsp seasoned salt
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp red pepper flakes
1 loaf ciabatta bread

Preheat oven to 400 degrees. Give the artichokes a rough chop. In a medium bowl, mix together the cream cheese, artichokes, garlic, Parmesan, salt, basil, oregano, and red pepper flakes.

Slather the bread with the spread and top with extra cheese. Bake for 20-25 minutes or until top is golden brown.

Mmmmmm. The dried herbs and Parmesan gives this a slight Italian feel so this would be excellent served along side your favorite Italian dish.

One more thing. You can slather the spread on the bread and cut it into strips after you've baked it, but I knew I was going to want it the second it came out of the oven so I cut if before.

  1. Yup, totally LOVE artichokes! I'm pretty sure I was the only kid in grade school, that when asked what my favorite food was, exclaimed "artichokes!" Everybody else said something like "Pizza! And what's with the girl who loves a vegetable??"
    Sounds SO ggod!
