BBQ Turkey Meatloaf


Meatloaf is one of those comfort foods that when you find your favorite recipe, you kinda tend to just leave it alone. That is unless you have a barbecue addict for a husband like I do. And while I usually leave the "bbq-ing" up to Chris, OR our favorite local joint {Oklahoma Joe's}, I am super excited to bring you this tasty new favorite recipe of ours.

BBQ Turkey Meatloaf

For this meatloaf, I used a combination of two different BBQ sauces. We like a blend of a sweet and a spicy sauce. Use your favorite brand and you can't go wrong.

BBQ Turkey Meatloaf
1.25 lb package extra lean ground turkey
1 tsp olive oil
1 onion, chopped
2 cloves of garlic, chopped
1 egg
1/2 C old fashioned oats
1/2 C + 2 T BBQ sauce*
1/2 tsp BBQ seasoning
1/2 tsp worcestershire sauce

A little trick my mother-in-law taught me when making meatloaf is to use a larger dish instead of a loaf pan so that not only does the top of the meatloaf get brown, but so do the sides. I like the "crust" on the outside so this trick has come in really handy. If you don't have a 9X13 or larger baking dish, a loaf pan will work just fine.

Preheat oven to 350ยบ and spray 9X13 pan with non-stick spray. Heat olive oil in a skillet over medium heat. Add the chopped onion and cook for a few minutes. Add garlic and cook for an additional minute. Remove form heat.
In a large bowl, mix together the turkey, onion mixture, egg, oats, 1/2 C bbq sauce, bbq seasoning and worcestershire sauce. Using your hands to mix makes this step really easy. Form the mixture into a loaf and place in prepared baking dish. Brush meatloaf with remaining 2 T of sauce.

Bake, uncovered, for 40-50 minutes, or until cooked through. Let rest and cool a bit, then cut and serve.
