Whole Wheat Zucchini Pineapple Bread


Do you ever just crave a tasty piece of sweet, quick bread? I mean really crave one? Well, I do. And when I do, it's usually zucchini bread. We've talked about this several times, and yes carrot cake is my favorite kind of cake so you would think that carrot bread is my favorite, but it's not. It's not banana or pumpkin either. It's zucchini.

But this bread is whole wheat. Plus it has pineapple in it. So wait, whole wheat, vegetables AND fruit all crammed into one loaf of bread?? So if you really think about it, this bread is practically a health food, right? Sure. Whatever helps you sleep at night.

Whole Wheat Zucchini Pineapple Bread


Whole Wheat Zucchini Pineapple Bread
    makes 1 loaf
1 1/2 C whole wheat flour
1/2 tsp baking soda
1/2 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
3/4 C sugar
1/4 C vegetable oil
1/2 C canned crushed pineapple
2 eggs, beaten
1 1/2 tsp vanilla extract
1 1/2 C grated zucchini
1/2 C chopped walnuts

Preheat oven to 350ยบ and spray loaf pan with non-stick baking spray. In a medium bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg and salt and set aside. In a large bowl, mix together the sugar, oil, pineapple, eggs, and vanilla. Stir in the zucchini. Add the dry ingredients to the wet and stir just to combine. Fold in chopped walnuts and pour batter into prepared baking dish. Bake for 45-50 minutes or until toothpick comes out clean.

This is going to sound a little cra cra, but this bread is really good with a little peanut butter smeared on it and heated for a few seconds in the microwave. Yeah, don't knock it 'till ya try it! I like the pretty chunks of pineapple in here. It makes a great little bread for a brunch or get together.

  1. A very healthy loaf of bread. I've never include veggies into my bread. Maybe I should start with this recipe of yours. By the way your zucchini pineapple bread looks beautiful.
