Funfetti Blondie Bites

You would think that after making my S'more Blondie Bars and my Black Walnut Dark Chocolate Toffee Blondies my "blondie itch" would have been scratched.

Nope.
It's actually getting worse I think! I can't stop thinking of fun ways to make blondies. Here is my latest creation.


Funfetti Blondie Bites

Don't they remind you of a fun birthday party?

Don't get me wrong, these were good all by themselves.

But honestly, who doesn't love bite sized things covered in chocolate?

And pulling everything out of my sprinkle cabinet? Oh, it makes me happy!


Ok, let's get to it!

Funfetti Blondies
     makes 36 small bites (plus more for snacking)
1/2 C (1 stick) butter, softened
1 C light brown sugar
1 egg
1/2 tsp vanilla
1 C all-purpose flour
Pinch of salt
1/2 tsp baking powder
1 T powdered sugar
1/2 C sprinkles

Extras
8-10 oz white chocolate 
Sprinkles for decorating

Preheat oven to 350 degrees. In a medium bowl, combine butter and brown sugar and mix until well combined. Add in the egg and vanilla; mix to incorporate. Mix in the flour, salt, powdered sugar and baking powder. Stir until everything comes together. Lastly, add the sprinkles. Stir. 

Spray an 8X8 dish with Baker's Joy. Cook for 29 minutes (seriously), or until tooth pick comes out clean. Let dish cool completely on a cooling rack (I cooled them overnight).

Next, cut off the darker, crispy edges. Set them aside for your snacking enjoyment. MmmmmMMMM!
Cut into 6 strips, then cut those into 6 squares. You should have 36 squares when you finish cutting.

Place squares on parchment paper covered baking sheet, and into fridge to get slightly chilled. Melt chocolate in the microwave or double-broiler; be careful not to burn it. Dip one blondie bite at a time into the white chocolate. Use a spoon to help you cover it if needed. Cover with chocolate and place back on the parchment covered baking sheet. Decorate with sprinkles. Repeat with remaining blondie bites. Place pan in fridge so the chocolate will set. 



 If you run out of white chocolate (like I did), don't worry. They are still super cute with out it!

Surprise your friends and give these as gifts. Or keep them all to yourself! :) Use them for a fun birthday party OR even a baby shower!

    1. Michaela, for these brownies, I made them from scratch, but it is VERY easy!! Are you referring to the funfetti cookies?
