These grilled pizza parties are time consuming but totally worth it! The crust gets nice and crispy on the edges, stays chewy in the middle and the grill gives the toppings tremendous flavor! My pizza creation for the evening was....
Roasted Fig, Prosciutto and Goat Cheese Grilled Pizza
We had 7 pizzas overall that night and this one was my favorite (I know, I'm a little biased). The sweet figs and onions with the salty prosciutto and creamy goat cheese made this pizza a knock out! I started the dough out with some good olive oil and finished the pizza off with a balsamic vinegar.
I had to do a little prep work to my toppings so the pizza turned out just the way I wanted it to. I got some beautiful brown turkey figs from my farmer's market and decided to roast them and sweeten them up with a little honey.
Roasted Fig, Prosciutto and Goat Cheese Grilled Pizza
Store bought or homemade pizza dough
Olive oil
Salt and pepper
5-6 fresh figs, sliced into 1/4 inch rings
2 tsp honey, divided
1 1/2 tsp balsamic vinegar, divided
5 oz prosciutto
1 red onion, thinly sliced
6 oz goat cheese, crumbled
Preheat oven to 400 degrees. Place fig rings in a small baking dish and brush 1 tsp of honey over the tops.
Bake for 20 minutes and remove from oven and set aside.
Heat skillet on medium heat and cook onion. After a few minutes, add 1 tsp of honey and 1 tsp of balsamic vinegar. Continuing to stir, cook until they shrink down quite a bit.
When finished, pour onions in a bowl and set aside. Slightly brown the prosciutto in the same skillet. When finished, add to bowl with onions.
Meanwhile, roll out pizza dough and heat grill. Brush one side of dough with olive oil then sprinkle with salt and pepper. Place dough on the grill, oil side down. Cook for a few minutes, until the bottom is golden brown. Remove from grill and place on large baking sheet. Brush other side with olive oil, top with goat cheese, onions, prosciutto, roasted figs, and remaining balsamic vinegar. Place back on grill for a few minutes, until goat cheese is slightly melty and toppings are warmed through.
Remove pizza from grill and allow to cool slightly before cutting with a pizza cutter. Serve warm.
