Mexican Dorito Casserole
Nothing "pretty" about this, just a yummy, comfort-food casserole!
I got this recipe from my mother-in-law a few years ago and have only made this a few times. It's SO easy to put together and it doesn't take very long to make either. Here's what you need.
Mexican Dorito Casserole
adapted from Momma Hann
serves 6- 8
1 - 1.5 lb lean hamburger
1 can cream of chicken soup (I used 98% fat free)
1 can spicy chili beans
1 can diced Rotel, drained (I used mild with green chilies)
1 package Spicy Nacho Doritos
1-2 C shredded cheddar cheese (I used reduced-fat)
Preheat oven to 350 degrees. Brown meat in large skillet. Once meat is cooked, add soup, beans and Rotel and stir. Crush about 3/4 of the Doritos and place them in the bottom of a 9X13 baking dish. Pour the meat mixture on top of chips.
Add the rest of the crushed chips to top, and top with cheese.
Bake for 15-20 minutes. The sides will be bubbly.
Let cool slightly and serve.

Oh no... we are serious doritos fans. I have a picnic to attend and think this will be the perfect dish to share. Thanks!

ReplyDeleteTammy!!! I am so glad you commented on here about those chips! I actually have a note scribbled on the side of that recipe to give that a try! {along with other changes}. You are so awesome!! I'll try to do it soon! :) Thanks again!
DeleteCan you add sour cream to the meat mixture?
ReplyDeleteI usually add a dollop after it's cooled and serve on a bed of fresh spinach:0)
DeleteI really like this meal. My kids LOVE it. We use diced tomatoes and lettuce and sour cream on top. A favorite in my house. Thanks for the recipe. Yummy!!
