These make me happy. Like confetti and sprinkles happy.
Funfetti Cake Batter Cookies
Sometimes things get crazy when I remember I have a sprinkle stash.
Do you remember what this picture was from?
That's right. It was from my Funfetti Blondie Bites. Oh dear. I think someone should make vitamins that look and taste like sprinkles. Eh? Million dollar idea??
makes 30-32
1 box vanilla cake mix, 18.25 oz
1 tsp baking powder
2 eggs
1/2 C vegetable oil
1/2 tsp vanilla extract
1 C color sprinkles
Preheat oven to 350°. In a large bowl, mix together the cake mix and baking powder. In a small bowl, mix together the eggs, oil and vanilla. Add the egg mixture to the cake mixture and stir to combine. Stir in the sprinkles. Drop by spoonfuls onto a cookie sheet or silpat.
Bake for 10 minutes. Allow to cool for 5 minutes on cookie sheet before transferring to cooling rack. They will be very soft at first.
Cool and enjoy!
You may have noticed that I didn't use an actual Funfetti cake box mix. I did that for two reasons. One, I have seen pictures of those and they kind of lack pizzaz if you ask me. I wanted WAY more sprinkles in mine. Secondly, I wanted to see how the sprinkles turned out in the batter. I think these would make great game day cookies. Just use your school colors (ahem, orange and black!) and bring on the cheers!

Look! Even the underneath side is pretty. :)
These would be fun for a kids party or a baby shower. You could also use pretty red and pink sprinkles and make them for Valentine's Day!

ReplyDeleteThese are so adorable, I love the sprinkles! What a great idea :)
ReplyDeleteIs it okay to use white cake mix instead of vanilla cake mix. Would it affect the taste?
ReplyDeleteThat would work great!!
DeleteI love the school colors idea!!
ReplyDeleteWhat about a yellow cake mix?
ReplyDeleteThat would work great, the color would just be a little different.
DeleteTHESE ARE AMAZING... I didn't add spinkles but I did dust the top with cinnamon sugar! THANKSSSS so much for the recipe.....
ReplyDeleteYum, that sounds great!!
DeleteAmazing and so easy! I made them into vanilla ice cream sandwiches for dessert tonight. Yum! The college kids coming over for dinner from my daughter's floor should love them.

DeleteI was out of white cake mix and noticed that I did have funfetti cake mix. So.... after some thought, I used that AND the cup of sprinkles! I also dyed them green for St. Patrick's Day and they turned out yummy! They are also really pretty. Thanks for posting such a wonderful recipe! I love how well the dough cleaned up in my bowl too! You're amazing! Thanks!!
ReplyDeleteThose sound so awesome and fun!! :) Way to get creative. There's nothing like throwing 1/2 a cup of sprinkles into something! :)

ReplyDeleteSo glad you liked them. Yeah, you can never have enough sprinkles! :)
DeleteMade these today for my son's birthday treat at school and the kids loved them. We topped each with a squirt of canned whipped cream (my son's favorite thing) and that sent them over the moon! The cookies are so easy to make, they are yummy and so fun. Next time, I might dip an edge or bottom in melted chocolate or drizzle some on top to take it up a notch.
ReplyDeleteHow fun, so glad they liked them. I agree, a side dipped in Chocolate or something would be excellent!
DeletePinned you on pinterest, then saw you are a fellow OSU grad. Yay for orange & black sprinkles. Go Pokes!
ReplyDeleteHey there! How fun!! Go Pokes! So glad you stopped by and I hope you visit often!
DeleteFound these on pinterest and made them for our neighborhood Easter egg hunt, LOVE them, thanks so much for sharing!
ReplyDeleteHow much fun! So glad yall liked them!
DeleteThank you for sharing this fabulous recipe! Found you via Pinterest ;-)
ReplyDeleteThese look delicious! My son is gluten intolerant, so I adapted the recipe and blogged about it (with links to your blog!) Thanks for the baking inspiration!!!! Even gluten free, they turned out delicious!
ReplyDeleteThat is awesome!! So good to know for gluten free folks!! Thank you for sharing!
DeleteAmanda, I'm sure 1/2 a cup would still be great. You could always start with 1/2 and then if it looked like you needed more you could always add a little more.
ReplyDeleteI made these today for my in-laws' Easter bbq. They came out GREAT and were delicious! I'm known as not being a cook/baker, but I think I did good with these. :)
ReplyDeleteThese look amazing. My son is have a puppy themed birthday party and I was thinking about using a cookie cutter to make these in the shape of bones. I'm worried they will loose the shape when they bake. Any ideas? Maybe make in a bar pan and cut when cool?
ReplyDeleteJessica, yes, I would cut then when they are cool. They REALLY spreadout when they bake. If you take pictures, make sure to post them on my fb page! Can't wait to see them ;)
Delete"I think someone should make vitamins that look and taste like sprinkles. Eh? Million dollar idea??"
ReplyDeleteWe already have that :) It's called Pikovit, and you've probably guessed it, it's for kids :) 5-7 y of age! I can still taste them...but they werent all sugary, more fruity :)
I made them with strawberry cake mix!! Amazing!!! They went way faster than the vanilla ones.
ReplyDeleteNow THAT sounds good!!! I will for sure have to try those! Thanks! :)
DeleteAll I have is a chocolate devil's food cake mix in the cabinet so I'm just going with it. We will see! lol
ReplyDeleteI made these today with a few variations - devil's food cake mix, mini chocolate chips instead of sprinkles, and a few pinches of instant espresso powder, cinnamon, and chili powder to taste...I'm going to call them Mexican Chocolate cookies, because they taste like Mexican Hot Chocolate!! Yum!
ReplyDeleteOk, those sound FANTASTIC!!! Hmmm, do you have pictures of them?? I may have to try those! YUM!
DeleteI want to make these for an event (a week and half away). Can they be made early and froze till the event?
ReplyDeleteI have never frozen these cookies or the dough. You aren't the first person to ask me that though, I may have to try it!
DeleteI added some chocolate chips. They turned out great. So glad to discover your blog. You are an amazing cook!
ReplyDeleteYou are so sweet, thanks!!! :) I'm so glad you liked them, everything's better with a little chocolate!!
DeleteI'm planning on making them tonight and adding chocolate chips as well!

So glad you liked them! Thanks for letting me know! :)
DeleteMy boyfriend just had three in a row of these yummy cookies. His favorite cake mix is funfetti and he was totally stoked when I told him I was about to whip these up. Thanks!!
ReplyDeleteAwesome!! I'm glad you guys liked them! :)
DeleteCan I use classic white cake?
ReplyDeleteYou sure can!
DeleteOh M Gee!! I made these and they are so good! Thank you, check em out and tell me what you think! I'll link your recipe! Thanks & Sugars to you!!!
ReplyDeleteThanks, Im glad you likd them!! ;)
DeleteMade these today! They were great and maybe a bit addicting, too! Thank you so much!!
ReplyDeleteI am going to try your recipe tomorrow. However, I was just wondering the only vanilla cake box I could find in the store was a french vanilla cake mix and it was slightly smaller than the recipe calls for (15.25 oz). Will this taste the same?? Or should I switch up the measurements? Thanks!
ReplyDeleteJulie, I haven't tried it with a smaller box mix however a few people said it works well. I would probably do one of teo things. I would either use a little less oil or add a little flour. I hope this helps!!
DeleteI just pinned these on Pinterest! So, SO fun!! LOVE your blog! : ) I'm terrible in the kitchen so I need all the help I can get!
ReplyDeleteI hope you give them a try! :)
Deletethese look unreal!
ReplyDeletewhat happens if you don't use baking powder?
ReplyDeleteSorry I only getting to this now. :( I haven't tried it with our the baking powder. They are already kind of flatish, so hmmmm, I'm not sure.
DeleteI found several recipes on Pintrest for cake batter cookies, but yours had the simplest ingredients and looked the best so my boyfriend and I went and picked up vanilla cake mix, sprinkles, and unsweetened applesauce to replace the oil in the recipe. I also only found the 15.25oz vanilla cake mix, but I added a little flour and they turned out great! My boyfriend and I both enjoyed them a lot! Thanks for sharing! :)
ReplyDeleteLaci, do you know how much applesauce you used for this? Did you replace all the oil with apple sauce? Also, do you remember how much flour you added? I've had a few people ask how much to use with a 15.25oz box but I've only ever used the big ones. Thanks in advance! :)
DeleteI am walking into the kitchen right now to go make these! These cookies look WAY too cute! So pumped to whip up a nice big batch! Thanks for the recipe!
ReplyDeleteStacy, I hope you liked them!! I really like the way the cookies make the kitchen smell too. Mmmmm
DeleteI made up several batches yesterday. They were delicious!! I added orange food coloring and brown sprinkles for a fall theme.
DeleteOooo, I bet those were so cute!! If you have a picture of them, (and you want to share), you can post them to my facebook page! https://www.facebook.com/CookinCowgirl
DeleteI would love to see them!
Do you think these cookies would work with cookie cutters? Thanks, they look delicious!
ReplyDeleteHey there! Ok, here's what I would do. The cookies spread out a lot when they are baking SO I would bake them in circles first, then use a cookie cutter to cut the desired shape AFTER they have cooled completely. I know that doesn't sound like as much fun, but trust me, they will NOT hold their shape if you use a cookie cutter prior to baking. Hope this helps! :)
DeleteI just wanted to say thanks for sharing this recipe. I found it on Pinterest and have made them several times since. My daughter loves the "sprinkle cookies." Today we made them Christmasy by adding red food coloring to the dough and using green jimmies with white snowflake sprinkles. They turned out so cute. So, thanks!
ReplyDeleteSo glad y'all like them! If you want some really Christmas-y ones, try it with the red velvet cake mix! Mmmmmm!!
DeleteHi! these look awesome! i'm gonna make them today with my two nieces :)
ReplyDeletethe only size of cake mix box i could find is a little over 15 oz. how much flour should i add to the recipe to make it work?
Lisa, I haven't tried to make these with the smaller mix. I was looking back at previous comments and no one said exactly how much they added. Let me know if you try it! Thanks!
DeleteHi!
Deletei did the math and it came out to about 1/3 of a cup of extra flour! i did that and the cookies came out beautifully! so nice and fluffy! will definitely make again!! :) thanks.
Awesome! Thank you for letting me know! I will be sure to make a note of this in case I can't find that cake mix size again! :)
DeleteHi If I am having a party on Sunday - how many days in advance can I make theses cookies.
ReplyDeleteHey there! I would not make these more than two days in advance. So, Friday at the earliest. They are kind of crispy on the outside and soft in the middle and you don't want them to get too hard. :) Let me know how they turn out!
DeleteThanks! The next time you make these can you measure the cake mix in cups so we have a better guess at the difference between the various cake mix sizes. I can't find 18.25 - thanks again!
ReplyDeleteJust had someone add a comment below and said they used the 15.25oz mix and kept everything else the same. May be worth trying.
DeleteI just made a batch of these and they are delightful and delicious. I used 15.25 oz. cake mix and kept everything else the same -- they came out great. They will surely be a big hit at the potluck I am bringing them to tonight. Thanks for such a cute and colorful recipe! :)
ReplyDeleteThanks for the feedback, so glad you liked them! I hope your potluck friends enjoy them also. :)
DeleteHey there!
ReplyDeleteI saw these and knew what my evening plans were... I'm in Germany though- a land with no pre-made cake mixes. So I whipped up my own cake mix by just adding the dry ingredients and then added whatever else was listed. IT WAS AMAZING! :) Thanks so much for this awesome recipe!
Awesome!! So glad you liked them. And good for you for not using a pre made cake mix! :) Way to "think out side the box!" bahaha Sorry, I couldn't help myself! Anyways, thanks for stopping by and letting me know!
DeleteLove this recipe, it looks so yummy - will definitely be making it.. I love your blog too and joined your followers. Stop by mine too http://www.candoitmom.com/
ReplyDeleteThanks, Diane
yumm just made a batch, so delish!!!!! I could only find french vanilla cake mix but no worries, they are still yummy!!
ReplyDeleteThese are my absolute favorite cookies! I change up the recipe somewhat by mixing and matching the cake mix flavor with different extract flavors. Some favorites have been Chocolate cake with peppermint extract, Lemon cake and lemon extract, carrot cake with vanilla extract, strawberry cake with almond and vanilla cake with 1/2 vanilla and 1/2 orange extract - creamsicle! YUM!! Thank you for this recipe, my Youth group LOVES these cookies!
ReplyDeleteoh I like that cookies
ReplyDeletei love eating that's why im too fat now :)
but most of the time what i eat are any kind of chocolates
like milk chocolate ,French macarons, and macarons london and so on.
well anyway that cookies recipe above is interesting i wanna try that at home.
Im slightly confused about the mixing of cake batter & baking powder...do I prepare the cake mix as it says on the box & then add the extra eggs (muxed with oil & vanilla) also?? Or is it dry cake mix with baking powder & the egg mix added to that??
ReplyDeleteKristen, great question! You do not follow the box instructions. The cake mix is just one of the ingredients. So, just mix the cake mix with the baking powder, then add the wet ingredients to that. :) Hope you like them!! -Cookin' Cowgirl
DeleteYes I made them yestdrday and they turned out AMAZING!!! big hit, gone in no time!! Will definitely be making these for any & every occasion!!! Thank you so much :)
ReplyDeleteYea! So glad you liked them :) They are so easy and fun, huh?! Thanks for letting me know!
