This is a quick and simple meal to throw together on a week night, or anytime. The slightly melty feta cheese makes this healthy dish feel "bad" and you almost don't even know you are getting a vegetable in there.

Spinach and Feta Chicken
Spinach and Feta Chicken
3 chicken breasts, cut into pieces
1 red onion, roughly chopped
1 8-10oz bag baby spinach leaves
2 cloves garlic
1/2 tsp marjoram
1/2 tsp cumin
1/4 tsp salt
1 C fat free feta cheese crumbles
In a large sauté pan, begin cooking chicken pieces, sprinkling in marjoram, cumin and salt. Cook until done and set aside. In the same pan, sauté the red onion for a few minutes. Once onions have turned slightly translucent, add spinach and garlic. Sauté until spinach begins to wilt.
I served this with my double red pepper hummus and pita chips for a well rounded meal. {Let's be honest....I would probably freak out if I didn't have carbs with every meal!}

ReplyDeleteNice way to go greek with chicken. This looks like a tasty well rounded meal with fresh ingredients. It also helps that the ingredient list is not long. I would welcome a plate of this on my dinner table-yum!
