I have another holiday cookie for you. These ones are crinkly, and green and nasty, wasty! These cookies are for The Grinch! You've heard of How The Grinch Stole Christmas, but these are the....
"How The Grinch Crinkled Christmas" Cookies
I have made several versions of cookies using cake batter mixes, and that's what these cookies are too. I used a Duncan Hines French vanilla cake mix, so I guess you could say the flavor of these cookies is vanilla. Cake batter cookies, if cooked properly, are so chewy and delicious. Also, they are not too sweet, so the powdered sugar gives them a nice sweet boost.
"How The Grinch Crinkled Christmas" Cookies
adapted from my Red Velvet Peppermint Crinkle Cookies
makes about 36
1 18.25oz box French vanilla cake mix
6 T butter
2 eggs
Green food coloring (I used 60 drops)
1 C powdered sugar
1 t corn starch
Preheat the oven to 375°. Melt the butter and set aside to cool. In a shallow dish, mix together the powdered sugar and cornstarch with a fork. In a large bowl, mix together the cooled butter, cake mix and eggs. This will be a little hard to stir together. Add the green food coloring and make sure it is all mixed in.
Move it around with spoon until it is mostly covered in powdered sugar. Then, once it is already covered, roll it into a ball and place it on a cookie sheet.
Make sure you don't over crowd the baking sheet because these cookies spread out.
Everyone know why The Grinch was so grinchy. Because his heart was two sizes too small! But now instead of termites in his smile, he will have cookies!

This recipe gave me terrible fits. I could not get the right shade of green, and the cookies constantly kept turning out to be either a little brown or underdone. They're so pretty here. :(

DeleteI had so much trouble with them getting brown on top and not being done inside even at 7 or 8 minutes. The ones that came out, just didn't taste very good. I don't think I'll be making any cake batter cookies any time soon...I was disappointed because they are so cute for St. Patty's Day.

DeleteI made these for St. Patrick's day, following the recipe as written, and they were wonderful! I used Wilton colors and scooped them onto parchment paper with a Pampered Chef 1 TBSP scooper, and they tasted and looked great, and they were all quite uniform (thank you scooper)! I liked them so much that I decided to make your Funfetti Cake Batter cookies the following week, and they were fantastic. Egg-shaped rice krispie treats are next, and I found a box of strawberry-flavored rice krispies to use. Yum!

ReplyDeleteOne daughter did these while the other did red ones! We learned after batch number one to really coat them in powdered sugar otherwise it 'melts' into the cookie. Yummy nonetheless!

ReplyDeleteLaura, I have never tried these ahead of time. I had one follower comment on my red velvet crinkle cookies and say "If you refrigerate the dough it will make these easier to roll."
