Peanut Butter Elf Cookies
In the honor of these cookies, Chris and I watched the movie Elf last night. One of my favorite parts of the movie is when Will Ferrell, aka Buddy the Elf, recites The Code of the Elves:
1. Treat everyday like Christmas
2. There's room for everyone on the nice list
3. The best way to spread Christmas cheer is singing loud for all to hear
I saw this peanut butter kiss cookie recipe on Ashleigh's Kitchen blog and I thought it would be perfect for little tiny elf cookies. Her recipe makes 24 big cookies, so I halved the recipe and ended up with 86 elf cookies!
Peanut Butter Elf Cookies
adapted from Ashleigh's Kitchen
makes 86
1/2 C natural, creamy peanut butter
1/2 C sugar
1/2 egg*
1/2 tsp vanilla extract
White and dark chocolate chips
Preheat oven to 350 degrees. In a small bowl, mix together the peanut butter and sugar until creamy. *In a small dish, beat the egg, then pour 1/2 of it in the peanut mixture. Discard the other 1/2.
Bake for 4-5 minutes. They will be slightly golden.
The cookies are too small to place on a cooling rack, so after about one minute, pull the parchment paper off the baking sheet and place it on a cool counter top. Top each cookie with a chocolate chip or white chocolate chip. They will crack slightly.
These cookies are only about the size of a penny. Perfect for elves!
I found little boxes at the dollar store to package these up as gifts.
These cookies would also make a fun treat for a cookie swap or a holiday party. It would also be a fun activity for kids to help with! We liked both types of cookie, but I think my favorite is with the white chocolate chips. The cookies themselves are not very sweet, so the sweet white chocolate with the peanut butter is a nice contrast.

ReplyDeleteThat is my favorite holiday movie for sure, and I've gotten my 8 year old daughter to thinks its a classic ha ha! I love all of the parts you outlined above, but another really funny line is "We elves try to stick to the four main food groups: candy, candy canes, candy corns and syrup"
