Red Velvet Peppermint Crinkle Cookies
As wonderful as this time of year is, I know folks can get overwhelmed with all there is to do. I don't even have kids yet and I don't seem to have enough time to get everything done. How do you do it, moms?
The nice think about this recipe is that I used a cake mix for the base of the cookies. Easy peasy!

My foodie friend, Liz, over at Southern Charm, had a giveaway the other day and I won some Duncan Hines coupons. {She's pretty awesome. Go check her out!} So I bought a Red Velvet Cake mix and got started.
I altered this from Duncan Hines Red Velvet Crinkle Cookies. The original recipe has lemon in it and no peppermint.
If you ask me, the peppermint is a necessity! These cookies are not overly sweet, which I like, but the peppermint is a nice addition. Plus it's pretty!
Red Velvet Peppermint Crinkle Cookies
makes about 36
1 box Duncan Hines Red Velvet Cake
6 T butter
2 eggs
1 tsp peppermint extract
1/2 C crushed peppermint or candy canes
1 C powdered sugar
1 tsp cornstarch
Preheat the oven to 375°. Melt the butter and set aside to cool. In a large bowl, mix together the cooled butter, cake mix, eggs and peppermint extract. Add in the crushed peppermint and stir. In a shallow dish, mix together the powdered sugar and cornstarch with a fork.
Now, Duncan Hines says to form into balls, but I had a HARD time doing that because the dough is so sticky. So, here's my special tip.
Take two spoons and drop a blob of dough in the powdered sugar like this.
Move it around with spoon until it is mostly covered in powdered sugar. Then, once it is already covered, roll it into a ball and place it on a cookie sheet. Believe me, this is one MILLION times easier!
Make sure you don't over crowd the baking sheet. These babies spread out.
Bake these for 9 minutes. (They won't look done but they are. I tried 10 and 11 minutes and each were too long). Take them out of the oven and cool for one minute. Then move onto a cooling rack. They will be chewy with little pieces of crunchy.
Plate up to serve,
or box up for gifts.

I just made these and they were good. I did make a mistake that turned out to work out for my benefit. I accidentally added the cornstarch to the batter rather than the powdered sugar - the result was a much easier cookie to roll. Tasted great, consistency was perfect. I might hold off on the peppermint extract next time (or maybe just use a smidgen). Thanks for sharing!

ReplyDeleteI can't wait to try these! When you say to mix the cake mix with the butter, eggs, etc, are you mixing just the dry cake mix or as it says to prepare it on the back of the box? Thanks for your help!

DeleteJust made this recipe for a Christmas reception. I did take some of the counsel above and added the cornstarch to the dough and added only 1/4 tsp. peppermint extract. These cookies are amazingly simple to make and so very tasty.

DeleteInstead of melted butter, I used 1/2 c butter flavored Crisco and they rolled up beautifully with far less sticky mess!
