Something about cereal bar treats make me giddy. I know, I'm a little old for that. But you're only as old as you feel and I, like totally don't feel 29.
Cinnamon Roll Crunch Treats
Someone took a bite out of that one. Crunch crunch.
Well, sadly, I was a little disappointed with the cereal. {Gasp! Did she really just say that?!} And that really doesn't happen very often with sugary stuff like this. It was pretty dry and I felt like it really needed something.....else. So I decided to help it out a little.
I added butter and marshmallows to make them like traditional cereal bar treats that we all grew up with. Then I added melty cinnamon chips so they actually tasted more like a cinnamon roll. And for the "icing on the cake," no cinnamon roll is complete with out the best part.....the glaze!
Yeah, this pan did NOT last long! I've even already had a request to make these at Christmas this year!
So you KNOW they have to be good!
I made a big 10X14 pan of these so it makes a lot.
Cinnamon Roll Crunch Treats
10 C cinnamon roll crunch cereal
5 T butter
16 oz bag of marshmallows*
1/2 C cinnamon chips
For the glaze:
1/2 C powdered sugar
1 T milk
1/2 tsp vanilla
*As I said before, I used a BIG dish for these because I wanted to make a lot, so make sure you grab the correct size bag of marshmallows. Spray a 10X14in baking dish with non-stick spray and set aside.
In a large pot over medium-low heat, melt the butter and marshmallows together. Add the cereal and evenly coat in marshmallow-butter mixture. Remove pot from heat and add in the cinnamon chips. Stir to incorporate. Pour cereal mixture into prepared dish, cover with parchment paper and press down firmly. Let cereal cool completely.
Meanwhile, to make the glaze, add powdered sugar, milk and vanilla extract in a small bowl and stir to incorporate. Add 1/2 tsp more milk at a time to get glaze to the right consistency.
{Here comes the fun part!} Drizzzzzzzzzzle the glaze over the cereal. Let harden for a few minutes, cut into bars, and enjoy!
My friend, Christi, came to visit us for the weekend and we enjoyed these little treats every morning for breakfast. Aaaaaannnnnd for snack time. :) She is so awesome and even joined me for "Mug Shot Monday!" Isn't she cute?!
Yeah, you're never too old to enjoy sweet, sticky, cinnamon-y treats like this. Especially with a friend....and a cup of coffee. Cheers to not feeling 29!
