My Favorite Sandwich

I have started this post probably 5 different times. And for some reason I am finally getting around to getting it done. You see, I am about to share with you my absolute FAVORITE sandwich, and I had to get it just right. I know there are a lot of people out there that think sandwiches are just kind of eh, and I am normally the same way. This is actually a cross between a sandwich and a burger. I got the inspiration for this heaven between bread from a little dive restaurant in Kansas City called The Brick. It's listed on their menu as The Reilly, and this is my take on it.


My Favorite Sandwich

There is pesto schmeared on one side and wonderful roasted garlic goat cheese spread on the other. Is there anything better? And not to brag or anything, but my homemade pesto is the BEST! So, as you can imagine, I'm kind of obsessed with this creation! 

The other reason that this sammy is so yummy is that it's grilled, in a cast iron skillet! You, of course, don't have to use a skillet, but I think it just gives it that little something extra. 

If you missed my post on how to roast garlic, here it is. And if you don't have time or just don't want to make your own pesto, that's perfectly fine. You can always use store bought. 


Cookin' Cowgirl's Favorite Sandwich
       makes 6 sandwiches
6 oz goat cheese, softened
1 head of garlic, roasted
2 1/2 - 3 lb ground beef (each patty will be between 6 and 8 oz)
Salt and pepper
Sliced tomatoes
12 slices of whole wheat bread
Light butter or butter spray

Put roasted garlic cloves in a small dish. 
Add the softened goat cheese and mash together to create a spread and set aside. 
Mix the salt and pepper into the beef and form into 6 patties. Heat skillet over medium heat and cook burgers to desired doneness. Set aside. {I usually try to make them a in a slight rectangular shape so they cover more of the bread}.
Use light butter or butter spray on the outsides of the slices of bread. On the insides, spread pesto on one side and about 1 ounce of roasted garlic goat cheese on the other. Top one side with tomato slices and the other with the burger. 

Cook sandwich in skillet until each side is toasty and golden brown. And that's it! That's my take on my favorite sandwich.
