Zesty Ranch Veggies, Grilled and Roasted


This is a simple way to jazz up your veggies. It's inexpensive, simple, delicious, fool proof, and a crowd pleaser. I love roasting vegetables. I love the flavor that food takes on when it is slowly roasted to perfection. And that's what I did with test potatoes. The green beans are another story. Do you have a grill basket? It's a must for the summer months! All the little stuff that will just fall through the grill (veggies, shrimp, scallops, ect.) is safely secured in a handy grill basket. Give these healthy veggies a try!

Zesty Ranch Veggies, Grilled and Roasted

Roasted Zesty Ranch Potatoes
3 lb petite red potatoes, washed and quartered
1/2 packet Hidden Valley Ranch seasoning
2 -3 T olive oil
2 fresh rosemary sprigs, chopped
Freshly grated Parmesan

Preheat oven to 400 degrees and cover baking sheet with foil (or use old baking sheet). In a large bowl, combine potatoes and oil; coat potatoes evenly. Add ranch mix and rosemary and toss to coat. Spread out evenly on baking sheet (use 2 sheets if they do not all lay flat).
Roast for about 1 hour, tossing twice. When they are almost done, add Parmesan cheese to the top and put back in oven for a few minutes. Melt cheese and remove from oven. 
Serve warm.

Grilled Zesty Ranch Green Beans
1 1/2 lb fresh green beans, rinsed and ends cut off
1 T olive oil
1/2 packet Hidden Valley Ranch seasoning
2 fresh rosemary sprigs, chopped
Freshly grated Parmesan

Heat grill. In a large bowl, mix green beans and oil together until beans are coated. Add ranch seasoning and rosemary and mix to combine.

Place beans in grill basket and put basket on indirect heat part of grill. 
Grill beans until tender and brown. Stir frequently so the bottom ones don't burn. 

Plate and top with grated Parmesan cheese.

So what do ya think?? Easy, right?! Now go get a grill basket. And get your yummy, healthy veggies on! (Yes, we did serve this stuff with a huge cheeseburger!)  What? I can't eat perfect ALL the time! ;)
