Grilled Buffalo Chicken Pizza

Pizza is one of the best things that the Mr. and I make on the grill. The crust gets perfectly chewy and no matter what combination of toppings we use, it's always good. I have to say though, this cowgirl outdid her self this time. Drum roll please.........

Grilled Buffalo Chicken Pizza

Lately I've had a slight obsession with buffalo sauce and have wanted to put it in everything.....

Now the sauce was the key ingredient for the pizza. Don't worry though, it's just as easy as getting a few things out of the fridge and mixing them together.

Grilled Buffalo Chicken Pizza
8 oz pizza dough
Olive oil
Salt and pepper
1 chicken breast, marinated in wing sauce, grilled
1 C part skim ricotta cheese
4 T wing sauce (I use Louisiana)
1 packet ranch dressing powder mix (I use Hidden Valley)
1 1/2 T celery seeds

In a small bowl, mix ricotta, ranch mix and wing sauce together for the buffalo sauce. Slice chicken into bite size pieces and set aside. Light grill and heat to medium-high heat. Roll out dough and brush top with oil, then salt and pepper it. Place the dough on the grill, oiled side down, and grill until bottom has grill marks and is golden brown. Brush the top with oil before flipping over. Flip and grill for about 30 seconds. 
Transfer dough to an old baking sheet and top with sauce. Add chicken and celery seeds. Place the pan on the grill and close the cover. Cook for a few more minutes until sauce and chicken are warmed through. Take off grill. Place pizza on cutting board and slice. Serve. 


And there you have it. Your favorite zingy sauce meets a warm, grilled pizza. I still haven't cooked pizza in the oven like normal people. I think it's because I just LOVE the way the grill makes the crust taste. Grill or oven though, you can't go wrong with this recipe!
