Watermelon Feta Quinoa Salad

Pin It We went to a cook out over the weekend and I was asked to bring a side. I have wanted to cook quinoa (KEEN wah) for a while but wanted to do something unique with it. I saw some beautiful watermelon at my store and got creative. This is a nice, light salad for summer and has amazing flavor combinations. I really liked the watermelon and feta together, and the mint was a nice background flavor to the nutty quinoa.

Watermelon Feta Quinoa Salad


Watermelon Feta Quinoa Salad
     serves 8
2 C cooked quinoa
3 C watermelon balls or cubes
1/4 red onion, thinly sliced
4 oz feta cheese crumbles (I used fat free)
12 mint leaves, torn
Balsamic vinegar
Extra virgin olive oil


In a serving dish, add quinoa, watermelon, red onion, feta and mint. Gently toss to combine. Drizzle in olive oil and balsamic vinegar.  Toss to combine. Top with mint garnish. Serve chilled.



Quinoa is a grain that is very high in protein, fiber and antioxidants. Un-cooked, it looks like this.

When it is cooked, it has a spiral-like germ that will break away from the seed and it will puff up like wheat or rice. You can see it on the watermelon below.
That small, 12oz box of uncooked quinoa made about 8 cups cooked! That's a lotta bang for your buck! :)
