S'mores Blondies


I hope everyone had a wonderful 4th of July! We sure did. I was fortunate enough to have my siblings (3 out of the 4 of them) come visit me in Birmingham for our 1st annual siblings reunion. We ate, played games, ate, swam, shopped, ate, watched movies, cooked.....ate some more! It was perfect.

I love having a lot of people in the kitchen because that's what I grew up with and that's what I'm used to. Usually, I would sit on the kitchen counter and watch my mom make dinner or my older sister make cookies. I would not help, I would only taste. And sometimes, I could even convince my younger brother to make me something. I know; shame on me! Last weekend was different though. There was lots of sibling cooking going on, and I even helped. :)

Last weekend was way too hot for a camp fire, but I was still craving a summer classic, S'MORES! So I took the 3 components and made them into a blondie. 

S'mores Blondies


Basic Blondies
     serves 16
1/2 C (1 stick) butter, softened
1 C light brown sugar
1 egg
1/2 tsp vanilla
1 C all-purpose flour
Pinch of salt
1/2 tsp baking powder
1 T powdered sugar

For the S'mores Part
3/4 C dark chocolate chips
1 C mini marshmallows
1/4 C gram cracker crumbs
1 T butter, melted

Preheat oven to 350 degrees. Spray 8X8 dish with Baker's Joy. In a medium bowl, combine butter and brown sugar and mix until well combined. Add in the egg and vanilla; mix to incorporate. Mix in the flour, salt, powdered sugar and baking powder. Stir until everything comes together. Add in dark chocolate chips and stir. Spread batter into baking dish and bake for 25-28 minutes, until toothpick comes out almost clean.

Meanwhile, in a small bowl, mix melted butter and gram cracker crumbs together and set aside.Take blondies out and top with mini marshmallows and gram cracker crumb mixture.


Put back into oven and turn on broiler (low setting if you have it). Patiently watch while marshmallows and crumbs brown. (About 2 minutes).

Remove from oven and let cool completely. Cut and serve.
