Mexican Dorito Casserole

Ok, so this recipe isn't going under the "Healthy Kitchen" tab, but I'm fine with that! It's cheesy. It's crunchy. It's salty. It's GOOD!

Mexican Dorito Casserole

Nothing "pretty" about this, just a yummy, comfort-food casserole!

I got this recipe from my mother-in-law a few years ago and have only made this a few times. It's SO easy to put together and it doesn't take very long to make either. Here's what you need.

Mexican Dorito Casserole
adapted from Momma Hann
     serves 6- 8
1 - 1.5 lb lean hamburger
1 can cream of chicken soup (I used 98% fat free)
1 can spicy chili beans 
1 can diced Rotel, drained (I used mild with green chilies)
1 package Spicy Nacho Doritos
1-2 C shredded cheddar cheese (I used reduced-fat)

Preheat oven to 350 degrees. Brown meat in large skillet. Once meat is cooked, add soup, beans and Rotel and stir. Crush about 3/4 of the Doritos and place them in the bottom of a 9X13 baking dish. Pour the meat mixture on top of chips. 

Add the rest of the crushed chips to top, and top with cheese. 

Bake for 15-20 minutes. The sides will be bubbly.

Let cool slightly and serve.

  4. Can you add sour cream to the meat mixture?

    1. I usually add a dollop after it's cooled and serve on a bed of fresh spinach:0)

  5. I really like this meal. My kids LOVE it. We use diced tomatoes and lettuce and sour cream on top. A favorite in my house. Thanks for the recipe. Yummy!!
