Roasted Red Pepper and Spinach Cracked Wheat

Bulgur (cracked) wheat is a staple in Middle Eastern cooking. My Lebanese mother-in-law uses it to make things like tabouli and kibba (kibbeh). I had some cracked wheat in my pantry and it was begging me to use it, so I got creative with the ingredients I had in the fridge, and here's what I came up with.

Roasted Red Pepper and Spinach Cracked Wheat
1 C fine cracked wheat
2 C reduced sodium chicken broth
1/2 C roasted red peppers, chopped
1 bag (8-10oz) baby spinach leaves
1 clove garlic, minced
1 red onion, chopped
Salt and pepper to taste*

In a medium sauce pot, boil chicken broth and add wheat. Cook for 2 minutes, then take off the heat and cover for 4 minutes. 
Meanwhile, in a sauté pan, cook onion and garlic. Add roasted red peppers to warm. Add spinach and cover to wilt. Mix everything together. When wheat is done, add to sauté pan and mix. Serve warm.


This makes a great side dish and cooks up very quickly. It's hearty and healthy and it's also good inside a pita with some meat. I am able to buy cracked wheat in my regular grocery store, but it yours doesn't carry it, you can find it at specialty foods stores or health food stores.

*I did not add any additional salt because the chicken broth gave the wheat so much flavor, but feel free to add some if you think it needs it.

  1. I have never tried cracked wheat, but it is something I need to keep an eye out for. This dish does look tasty-amazing what a few simple ingredients can become when prepared together. Well done.

  2. Cracked wheat is such a comfort food for me, well, all grains are. I love that you added veggies to yours, mine is always with brown sugar for breakfast!
