Breakfast Quesadillas with Carne Asada and Egg Whites

This is an easy way to enjoy steak for breakfast, and a great way to use up leftovers!

Breakfast Quesadillas with Carne Asada and Egg Whites


2 large whole wheat tortillas
1/2 C left over steak or carne asada meat, chopped
1/4 C red onion, chopped
1/4 C red bell pepper, chopped
4 egg whites
1/4 C tomato, seeds and juice removed, chopped
1/4 C cheddar cheese, shredded
Fajita or taco seasoning, to taste

In a large skillet, cook onion, pepper and seasoning on medium-high heat for a few minutes, until softened. Separate egg whites into a small bowl, then add to skillet and cook. Add meat to skillet to re-warm. Set aside.

Meanwhile, spray bottom of tortillas with cook spray and heat clean skillet or griddle to medium-high heat. Fill one half side of tortillas with egg and meat mixture. Top with tomatoes and cheese. Fold tortillas over and place on skillet. Cook on each side for about 3 minutes or until tortilla is golden brown. Remove and place on cutting board; cut into 3 triangles. Serve.
