Pumpkin Peanut Butter Dip

I have a small infatuation with peanut butter. Sure, it's fine in moderation, but I more than "moderately" like it. Lately, I have been trying to come up with way to "stretch" my peanut butter so it seems like I am eating more of it than I really am. (Wow, it didn't sound crazy until I just typed it out! haha Oh well.) I combined two of my favorite things- pumpkin and peanut butter- to make one awesome dip. The pumpkin pie spice also makes it feel kind of fancy.
Pumpkin Peanut Butter Dip

Pumpkin Peanut Butter Dip
3/4 C canned pumpkin puree
2 T natural peanut butter (I like Skippy)
1/2 tsp honey*
1 T unsweetened almond milk

In a small bowl, stir the pumpkin and pumpkin pie spice together. Add the peanut butter, milk and honey and stir to combine. That's it!
* I have made this twice now, once with the honey and once with a packet of sweetener. Both ways are great! Also, if you don't have almond milk, regular milk will work great. I just thought it needed a little liquid to make it creamy.

This delicious dip is SO rock star! Are you ready for this? Serve it with an apple and it has 1 1/2 servings of vegetables, a serving of fruit, healthy fats, 10 grams of protein, and 14 grams of fiber. It really does fill you up and keep you full for a long time!
